Thai Chicken Wraps

Ahh, this recipe brings back memories of college! My mom found the recipe, and all my college friends loved it - when we would get together to make dinner, this was our go-to recipe. (Rachel, Anna, Mitra, Jane, and Katie, I'm thinking of you all!)

Thai Chicken Wraps

1. Make the peanut sauce.

1a. in a small sauce pan over medium heat, combine

0.25 c creamy peanut butter
0.25 c sugar
3 T soy sauce
4 cloves garlic, chopped
2 T oil
3 T water
cayenne pepper (optional)

1b. once it makes a smooth sauce, transfer to a bowl and refrigerate.



2. Start making the rice (brown or white).


3. Start making the chicken.

3a. cut 4 boneless chicken breasts into strips
3b. optional: marinate for an hour or so in some teriyaki sauce
3c. saute over medium heat until cooked through


4. Meanwhile, start the veggies.

4a. chop up a small red onion. cook it in 2 tsp oil until translucent


4b. add the following to the onion:

1 c shredded carrot
1 c shredded cabbage
4 green onions, chopped
1 T ginger
2 cloves garlic, chopped

4c. saute until warmed through / slightly wilted



5. Assemble the above (rice, chicken, veggies, and peanut sauce) in a tortilla.
