Rhubarb Crisp

This is the best rhubarb crisp/crunch recipe ever! I got it from my great-grandma's Mennonite Community Cookbook (copyright 1950).

Rhubarb Crisp
1 c flour
.75 c oatmeal (not instant)
1 c brown sugar, lightly packed
.5 c melted butter
4 c rhubarb (cut in 1" pieces)
1 c sugar
2 T cornstarch
1 c water
1 tsp vanilla

1. Mix the flour, oatmeal, brown sugar, and butter until crumbly. Pour half into a very well greased 9" baking pan (grease with butter, not with cooking spray!).


2. Add the rhubarb.
3. Combine the remaining ingredients and cook until thick and somewhat clear.


4. Pour the sugar mix over the rhubarb, then top with the remaining crumbs.


5. Bake at 350 for 1 hour.
