Fresh spring rolls

rice noodles or vermicelli
assorted vegetables

a protein (such as shrimp, marinated beef, pork, or chicken)
1. Prepare the rice noodles according to package directions. These noodles are to be soaked in warm water for 10 minutes, then drained).
2. Prepare the veggies - here I grated some carrots, julienned some cucumbers, chopped some green onions, and tore up some lettuce. (You could also use bell peppers, zucchini, etc.) Also, cook the protein. I just boiled some shrimp. (Spring rolls are also especially tasty if you marinate some beef and then saute it in strips.) Finally, wash some herbs - I prefer mint and basil.
3. Prep the spring roll wrappers according to package directions. These call for being soaked in cool water for 5-10 seconds until pliable - any shorter and the wrapper will snap, any longer and they rip too easily. Pile on the ingredients of your choice.
4. Wrap and serve!
Note: They are especially tasty if served with the peanut sauce from this recipe.
