Pesto!

When we went to Mike's parent's house on Sunday to celebrate my birthday, his step-mom's basil plant was basking in good health. Truly, it was more of a bush than a plant. What a treat when she said that I could help myself to as much basil as I wanted! Here are picture from the second (of three) batch of pesto that I made yesterday. Thank you, Marsha!!

Pesto
2-3 cloves garlic
2 c basil, lightly packed
.5 c parmesan
.5 c EVOO
.33 c pine nuts
S&P

1. Pulse the garlic in a cuisinart until minced.


2. Add the basil and pine nuts. Pulse until finely chopped.



3. While the machine is on, add the olive oil in a steady stream. Scrape down the sides.


4. Add the cheese and pulse until blended.

9/19/09 update: serving idea
Serve with fresh baked bread, vine ripened tomatoes, and fresh mozzarella!
