Super yummy sourdough

I discovered a *great* sourdough recipe this weekend. Too bad it took FOREVER, or else I'd make it all the time. Here's the rough breakdown:

Saturday at (before noon): feed the starter
Saturday at 4pm: mix and let rest
Saturday at 8pm: transfer to fridge
Sunday at 8am: mix the rest of the ingredients
Sunday at 1pm: shape and let rise
Sunday at 3pm: Bake
Sunday at 3:30pm: Enjoy!

So, it wasn't super labor-intensive, it just took forever - basically, 28 hours *minimum*....but it sure was worth it....

Super yummy sourdough

1 cup "fed" sourdough starter
1.5 cups lukewarm water
3 cups plus 2 cups unbleached all-purpose flour
1 T sugar
2.25 tsp salt

1. Combine the starter (which you re-started from the fridge 4-12 hours earlier), water and 3 cups of flour. Beat vigorously.


2. Cover and let rest at room temperature for 4 hours. Then refrigerate overnight, about 12 hours. (The next day, it may have sunken in on itself a bit.)



3. Add the remaining ingredients, kneading to form a smooth dough.



4. Allow to rise until doubled, about 5 hours.



5. Gently divide in half and shape into 2 oval loaves. Cover and let rise on parchment...


...until very puffy, about 2-3 hours. (Toward the end of the rising time, preheat the oven to 425.)

6. Spray the loaves with lukewarm water and make slashes.


7. Bake 25-30 minutes.
