I accidentally had about 1 cup of sourdough starter left after the other sourdough projects, so I decided to try making pancakes as well. Most recipes call for an unfed starter to be used, but I found this recipe for a fed starter. It wasn't too bad, and that's high praise coming from someone who doesn't really like pancakes to begin with!
Sourdough Pancakes1 cup sourdough
1 T sugar
2 T olive oil
1 egg
.25 tsp salt
.5 tsp baking soda
.5 T water
Mix the first five ingredients. Dilute the baking soda in the water, then gently fold in to the mix. Let it foam for about 1-2 minutes, then start cooking immediately. (Makes about 3 large or 4 medium pancakes.)
