Quesadilla Explosion Salad

This is a take off the salad of the same name at Chili's. It's very versatile, and something I crave most of the summer. I had a hankering for it earlier today and it sure hit the spot!

Quesadilla Explosion Salad

Vinaigrette:
4 T balsamic vinegar
6 oz orange juice
4 T sugar

Whisk over medium heat until the sugar dissolves. Then refrigerate to cool.


In a big tupperware, combine:
- 1 or 2 cans corn
- 1 or 2 avocados, chopped
- 1 tomato, chopped
- 1 can black beans (drained and rinsed)


Mix with the vinaigrette and with some Chipotle Ranch dressing.


Put some lettuce in a large bowl. Top with some crushed tortilla chips, a little grated cheddar, and some of the veggie/vinaigrette mix. (You could also add some marinated and grilled chicken, if desired.) Toss and serve.
