cucumber "salad"

This is an excellent recipe for when your cucumber plants go crazy in the summer. This "salad" will keep for months in the fridge.

Cucumber "salad"
2 12" cucumbers, peeled and sliced
1 bell pepper, seeded and cut in stripe
1 sweet onion, cut into rings
salt
1 c sugar
.5 c white vinegar
1 clove garlic, crushed
1 T fresh dill

Heat the sugar and vinegar in a small saucepan over medium heat, until the sugar is dissolved. Pour over the remaining ingredients, into a refrigerator-friendly container.

Let sit at least 2 hours before serving.
