Homemade McMuffins

What does it say that this meal was inspired by McDonald's? Despite the questionable heritage, I still think this recipe is great: easy, tasty, and filling.

Homemade McMuffins
Bagels or English Muffins
Cheese (I like Swiss, Mike prefers Pepper Jack - really, any cheese would work)
Eggs
Breakfast Sausage

Rather than getting the premade breakfast sausage (like Jimmy Dean), it's super easy to make your own. Just get some pork sausage from the grocery store. Add about 1 T of maple syrup, a minced garlic clove, some salt and pepper, and whatever other herbs and spices you like (I used some thyme and cayenne pepper). Mix it all together.


Shape it into patties.


Cook over medium heat, approximately 5 min per side.


Meanwhile, prepare the eggs. (Mike did this part, so I don't have any pictures. Basically he just mixed up some eggs and made a big omelet in the pan, but didn't fold it into thirds like you would with an omelet. So maybe it's more like a frittata? Then he cut the eggs into squares to fit the bagels.)

Melt the cheese on the bagel (in a toaster oven or broiler). Add the sausage and eggs.
