Fettucine Alfredo

Once you have homemade noodles (which, actually, aren't too hard to make), it's so hard to go back to the dried, boxed stuff. This is a tasty meal which my dad refers to as "heart attack on a plate" - sure, there are healthier recipes out there, but they don't taste as good!

Fettucine Alfredo

for the noodles:
2 to 2.5 c flour
4 eggs
2 tsp olive oil

for the sauce:
4 T butter
1 c 1/2 and 1/2 (milk doesn't work)
1 c grated parmesan or romano cheese

Mix the noodle ingredients together to form a rough dough. (I usually mix at first with a spoon. Then, as the dough starts to come together, I knead it by hand a few times.)



Shape the dough into a ball and let sit, covered, for 30 min.



Work with 1/4 of the dough at a time.


Feed the dough through the widest pasta machine setting. Then fold it in thirds and feed through again. Do this approximately 8-10 times until the pasta sheet is satiny and smooth.


Feed the sheets through successively narrower settings until the desired thickness of pasta has been reached.


Looking at the front sheet, you'll notice that the thickness (and length) goes from this:

...to this: (translucent enough to see the flour on the counter underneath the pasta sheet) Let rest for approx 10-20 min.


Now feed the pasta sheets through the pasta cutter. Let dry 10-20 minutes. (Mac loves to eat the pasta strands that fall to the ground!)


Bring a large pot of salted water to a boil. Add the noodles and cook for 2-4 min. Meanwhile, in the microwave, heat the 1/2&1/2 and butter (being careful not to scorch it). Once the pasta is cooked and drained, return it to the pot. Toss the cheese on top, then pour the warmed butter/half&half mix over top. Toss to mix thoroughly. Serve immediately.


We opted to serve ours with a few slices of marinated and "grilled" steak.
