Stupid Eli

So, with Mike out of town for his annual ice fishing trip to Red Lake, I've had the house to myself for the weekend. In some ways, it's been great - I love having all that time to myself, and knowing that new messes/clutter won't magically appear thanks to my lovely (but scatterbrained) husband. In other ways, it's not so nice - I had to watch the Packers lose to the Giants all alone, with no one to comfort me in my moments of misery. I'd like to think that if Mike had been here, and had been wearing the Packers socks that my parents bought him for Christmas, the outcome would have been different; but, alas.

The only redeeming factor to the evening was that I was eating yummy French Onion soup while watching the game. Here's the recipe in case anyone else needs some comfort food:


Yummy French Onion Soup

3-5 pounds red onions, cut into slices/chunks
3/4 stick butter
1/4 c balsamic vinegar
1/4 c sherry
1 carton chicken broth (~4 c)
1 carton beef broth
1 bay leaf
Swiss or Gruyere
French bread

1. In a Le Creuset-type pot, melt the butter over medium heat.
2. Add the onions. Cook until caramelized (but not burnt), about 2 hours, stirring often.
3. Add the balsamic and sherry; simmer ~15 minutes.
4. Add the broths and bay leaf. Simmer ~1 hour.
5. Pour into bowls over day-old bread. Top with cheese. Broil the cheese to melt and brown. Serve immediately.
